Ingredients (4 people)
– Onions (medium size) – x2
– Chicken Thigh Meat – 400g
– Salt and Pepper – a little
– Salad Oil – 2 tablespoon
– Grated Garlic – 1 teaspoon
– Grated Ginger – 1 teaspoon
– Cumin (aroma spice) – 2 teaspoon
– Coriander (aroma spice) – 2 teaspoon
– Turmeric (color spice) – 1 teaspoon
– Red Pepper (spicy spice) – 1/4 to 1/2 teaspoon *as you’d like
– Cut canned tomatoes – 200g
– Sugar – 1/2 teaspoon
– Tomato ketchup – 2 tablespoon
– Yogurt (sugar-free) – 100cc
– Salt – 1/2 teaspoon
Instructions
Step 1: Finely cut one of the onions. Not being at Kai’s speed is okay!
Step 2: Put the frying pan on high heat and heat up the cooking oil.
Step 3: Put in the finely chopped onions and fry them on medium-to-high heat. To prevent them sticking to the pan, stir with a spoon (wooden or otherwise)
Step 4: If it seems like it’s gonna stick, pour in about 50ccs of water and continue cooking.
It will change from light yellow -> slightly brown -> brown.
Step 5: When it seems to be a nice color, stop the heat and move the onions to a plate.
Making the Curry
Step 1: Cut the larger portion of your other onion, and cut the chicken thighs into bite size portions. Season the chicken with salt and pepper.
Step 2: Heat the frying pan at high heat and heat up a tbsp of oil.
Step 3: Put the fire on medium heat and fry the chicken. When it has changed to a desirably color, move it to the plate.
Step 4: Place the chopped onion into the leftover grease from the chicken and fry at medium heat. When the onion has changed color a bit, add in the garlic and ginger and continue to fry. Don’t forget to stir with a wooden spoon to prevent sticking/
Step 5: When the garlic and ginger smell good, add in the spices. Add it bit by bit.
Step 6: When you have a good smell, add in the cooked oninos, cut canned tomatos, and sugar and cook them. The cooked onions will give the roux a richness.
Step 7: Bring to a simmer and add in the ketchup, yogurt, and salt, and mix it all together well.
Step 8: Put the fire on low heat and add in the chicken, and stew it all together. When it looks good ad smells good, but doesn:t seem there yet, add in a little bit of salt and then it’s perfect!

Fried Rice Ingredients
Rice – 360g
Cooking oil – 2tbsp
Eggs – 2
Salt – 1/2 tsp
Pepper – As much as you like
Sauce Ingredients
Crab – 80g
Green spring onion – 20g
Ginger – 4g
Sesame oil – 2tsp
Water – 360cc
Chinese Dashi (like soup stock) – 2tsp
Soy sauce – 1/2 tsp
Sugar – 1/2 tsp
Potato starch – 1tbsp
Lettuce for presentation – 50g(or as you like)
How to prep the ingredients
Onion: Finely chopped
Ginger: Grated
Crab: Break them and take out the insides neatly
Potato Starch: Take two more tbsp and dissolve in water
Egg: Break and beat the eggs
Lettuce: Wash and cut them into bite-sized pieces
Making the fried rice
1. In a frying pan, fry the rice with 2 tbsp of cooking oil. Make sure to break up the rice so it doesn’t clump into a ball.
2. Pour in half of the egg and mix it all together. Pour in the rest of the egg and cook it so that it evenly turns yellow.
3. When it has been well cooked, add in 1/2 tsp of Salt and pepper moderately to taste.
To avoid wasting heat, immediately move it to a bowl.
Make the topping
1. In a frying pan, heat up 2 tsp of cooking oil and stir fry your onion and ginger. Be careful that it doesn’t overcook and burn!
2. When it starts to smell good, add in the crab, 2 tbsp of Chinese dashi and fry them. Then add in the 360g of water, 1/2 tsp of sugar, and 1/2 tsp of soy sauce to add flavor.
3. When it starts to boil, mix all of the ingredients together. Add in the wet and the dry potato starches evenly to maintain thickness
Arrange on the plate
1. Arrange the previously saved rice onto the plate.
2. Pour the topping on the fried rice, add in the lettuce and crab for decoration, and you’re done!

Mikuru’s cookies
Ingredients (15 cookies)
Egg yolk – 1
Sugar – 80g
Butter – 100g
Pastry flour – 180g
Baking chocolate – 15g
* A toothpick or wooden skewer would be convenient to use!
* This is a rough estimate of ingredients, so add more or less depending on the thickness and size of the dough
Let’s get ready to prepare the cookies!
Butter: Bring it to room temp.
* If using a stove, remove it as soon as it starts to melt.
Egg: Separate the egg white and egg yolk
* We won’t be using the egg white, so feel free to consume it
Pastry flour: sift through the flour
Let’s make the cookie dough
1. Mix the room temperature butter with 80g of sugar using a rubber spatula or a whisk
2. Mix until you can no longer see the sugar crystals, then add in the egg yolk and mix well.
3. Put in 180g of the sifted flour and mix gently with the spatula until you cannot see the powder of the flour.
* If you don’t mix well, the dough will lose its crispness. Keep your passionate mixing up!
4. When the dough starts coming together, separate the parts that will be used for the chocolate and plain respectively. In this case, we split 30% chocolate, 70% plain
5. In the for-chocolate dough, add in the baking chocolate powder, and mix until the whole dough becomes the colour of the chocolate.
6. Wrap the two doughs in plastic wrap and put them in the freezer to chill for about 40 minutes.
Let’s get baking!
1. Take out the dough , and stretch out the plain dough with a rolling pin and take out a circular cookie.
2. With a bit of the chocolate dough…

(1) Add in the dough in the shape of Mikuru’s bangs, eyes, and mouth to make a nice shape.
(2) Roll the dough thin and with a wooden skewer or a knife, draw in Mikuru’s bang, eyes, and mouth.
3. Bake in the oven at 170°C for 15 minutes and you’re done!
*Depending on your oven, you may have to adjust the timing. Keep an eye on your cookies!
